Ingredients

For the Salad

  • 2 to 3 QTee® pears
  • 2 zucchini
  • 2 salmon fillets
  • Some young salad greens
  • 1/2 untreated organic orange
  • 1 lemon
  • 1 tbsp honey
  • Olive oil
  • 10 g butter
  • Black sesame seeds
  • Fleur de sel
  • Freshly ground pepper

Preparation

The salmon:

  1. Remove the skin from the salmon fillets and cut them into cubes.
  2. Heat the butter and a splash of olive oil in a pan.
  3. Once the pan is hot, cook the salmon cubes for 3 minutes. Remove them from the pan and set aside.

The garnish:

  1. Cut the zucchini into spaghetti using a spiralizer.
  2. Add the juice of half a lemon.
  3. Cut the QTee® pears into slices and rub them with the other half of the lemon to prevent browning.

The vinaigrette:

  1. In a small bowl, mix the olive oil, orange zest and juice, juice of half a lemon, honey, salt and pepper.
  2. Whisk the vinaigrette well until you have a smooth dressing.

The finishing:

  1. Arrange the zucchini spaghetti, QTee® pear slices and salmon cubes nicely on a plate.
  2. Add some young salad greens and a few black sesame seeds.
  3. Finish with the vinaigrette, a few turns of the pepper mill and serve immediately.
