Ingredients
For the Duck Breast
- 2 duck breast fillets
- 4 QTee® pears
- Mix of young lettuce
- 4 sprigs of thyme
- 2 tbsp flower honey (or other honey)
- 20g butter
- 2 squares of dark, intense chocolate
- Fleur de sel
- Freshly ground pepper

Preparation
- Remove the duck breast fillets from the refrigerator 15 minutes before cooking.
- Cut the QTee® pears in half.
- Melt the butter in a pan and add the honey.
- Place the QTee® pears cut side down in the pan, cover and let caramelize. Remove them from the pan and set aside.
- Using a sharp knife, score a diamond pattern into the fat of the duck breast fillets. Make parallel, diagonal cuts along the entire length and repeat in the opposite direction.
- Season both sides of the duck breast fillets with salt and pepper.
- Place the fillets fat side down in a hot pan without oil. Sear on high heat and add the fresh thyme sprigs.
- Lower the heat and cook for 7 minutes. Turn the fillets over and cook for another 7 minutes.
- Baste the fillets regularly with the rendered fat during cooking.
- Remove the fillets from the pan and let them rest for 5 minutes on a warm rack.
- Slice the duck breast fillets and arrange them on a plate, add the caramelized QTee® pears and a handful of young lettuce.
- Just before serving, finish with fleur de sel, a few turns of the pepper mill and shavings of dark chocolate over the duck breast slices and QTee® pear.
